Instructions

Step 1
Begin with breaking down the chicken and adding to a bowl. Combine the spices. Pour over the pickle juice and buttermilk, and add half the spice mix. Mix until well combined, cover and leave in the fridge for at least 2 hours or best overnight.
Step 2
For the ranch, squeeze the lemon and finely chop the dill and parsley. Add to a bowl with the sour cream, mayonnaise, buttermilk and garlic powder. Season with salt and mix well.
Step 3
Take the chicken out of the fridge. In a bowl add the flour and the second half of the spice mix. Place in the chicken and make sure it is thoroughly covered in the flour. Shake off the excess.
Step 4
Take a large sauce pan and fill halfway with vegetable oil. Heat to 180c/350f and fry the chicken in batches for 10-12 minutes until golden brown and crispy.
