Instructions

Step 1
Cook the rice according to directions. Cook the blackeyes peas on low heat about 2 hrs. w/celery, carrot, onion, ham, fatback or bacon. When peas are done, put the rice on plates, ladle peas and a good amount of the pot liquor over the rice. Spread grated cheese on top of each serving. Microwave 30 seconds to melt the cheese. Sprinkle crumbled bacon on top of cheese. Put chopped tomatoes and scallions on top of that. 6 servings.
