Ingredients

1 packageGnocchi
1 lbchicken breast
cut into small cubes
32 ozchicken broth
2 cupsheavy cream
1 ½ Tbspcornstarch
2 Tbspchicken broth
3 Tbspneutral cooking oil
1carrot
sliced thinly
3celery hearts
diced
1onion
small, diced
8cloves garlic
minced
2 cupsbaby spinach
garlic powder
onion powder
cajun seasoning

rosemary
thyme

Instructions
Step 1
Season your chicken with garlic powder, onion powder, slap ya mama Cajun seasoning, pepper, and salt all to taste. Put in the fridge and let sit at minimum 1 hr up to 1 day.
Step 2
Add 3 tbsp of oil to a pan over medium-high heat and cook the chicken. Set aside.
Step 3
To a separate pan, add 2 tbsp oil and add your mirepoix (carrots,onion and celery). Cook down about 5 minutes. Add garlic and cook for 30 seconds-1 minute.
Step 4
Add 32 oz of chicken broth and season with garlic powder, onion powder, pepper, slap ya mama Cajun seasoning, rosemary, thyme. Bring to boil.
Step 5
Add cooked chicken

Add gnocchi and boil for 4 minutes. Turn down the heat and simmer for about 10 minutes.
Step 7
Meanwhile, blanch your spinach.
Step 8
After 10 minutes, add your heavy cream and blanched spinach.
Step 9
Mix cornstarch with some chicken broth to make a cornstarch slurry. Add to the soup to thicken.
Step 10
Add Parmesan cheese and fresh parsley. Taste your soup and add more seasoning to taste if needed.
Step 11
Serve with breadsticks or alone
