For the dressing:
Instructions
Step 1
Place peeled beetroots whole in a pot with water & salt and cook for an hour, let it cool down.
Step 2
Take the beetroot out from the pot and cut it into cube sizes.
Step 3
In a large bowl, add beetroot, feta, onions, scallions and pistachio, mix well.
Step 4
In a blender, add olive oil, lemon juice, salt and pepper.
Step 5
Drizzle the dressing over the salad mixture and toss to coat and serve.
