When I tell you ‘salad’s don’t have to be boring’, I actually mean it! Level up your salads by adding roasted veggies and your favorite toppings as well as dressing. Something I enjoy about making salads is how versatile and creative you can be with them. You can literally use whatever you have in your kitchen and make a masterpiece of a salad, that is what I did with this one. This salad was so nourishing and fulfilling I almost can’t wait to make it again!

Instructions
Step 1
On a parchement lined baking dish, add in your diced veggies, drizzle with 1 tbsp of olive oil, and seasonings.

Step 2
Place veggies in a preheated oven of 450 degrees Fahrenheit, cook for 15-20 minutes.
Step 3
Allow veggies to cool once cooked for 5-10 minutes.
Step 4
Once your veggies have cooled, add your spring mix to a large bowl followed by your veggies, crumbled feta cheese, and salad dressing of your choice!
