Instructions
Step 1
Preheat oven to 350°F
Step 2
Cut the tops off the garlic bulbs. Put the garlic in squares of foil and drizzle the bulbs with 1 tablespoon of olive oil between the 2 bulbs. Sprinkle with and pepper. Wrap the bulbs in the foil and bake for 1 hour.
Step 3
Allow the garlic to cool completely then squeeze the garlic cloves out of the bulbs into a food processor.
Step 4
To the food processor add in the drained and rinsed chickpeas, the tahini, seasonings, lemon juice, 3 tablespoons olive oil and water. Run the food processor for 3 minutes. If it’s too thick add more cold water 1 tablespoon at a time until you reach the desired consistency.
Step 5
Taste and add more salt, pepper, cumin or lemon juice to taste.
Step 6
Spoon into a bowl, drizzle with more olive oil and add any toppings you’d like.
Step 7
Serve with pita chips, pita bread, crackers and veggies. Refrigerate leftovers in an airtight container for up to 3 days.
