300gplain flour

½ tspbicarbonate of soda

½ tspfine sea salt

120gcaster sugar

1zest of lemon

100mlbuttermilk

4egg yolks
large

30gunsalted butter
melted and cooled

100gfrozen wild blueberries
Donught Dough
Instructions
Step 1
Mix dry ingredients such as plain floor, salt, bicarbonate of soda, baking powder and caster sugar in a bowl and zest with lemon





Step 2
In separate container add butter milk and mix with eggs and melted butter


Step 3
Add Butter Milk and egg mixture with dry ingredients and mix with either spatchela or a mixer




Step 4
Floor dust a chopping board to kneed dough and use a circular cutter to create donut shape. Cook in medium hot oil for about 10mins and leave to cool on wire rack
For Glazing
Step 5
Cook blueberries in pan until softened then add to a hand blender along with basil, lemon juice and vanilla extract





Step 6
Add chopped almonds to garnish and leave to cool in fridge for 1 hour for the glaze to set
