Instructions

Step 1
Put the chicken pieces in a bowl and rub it with Vinegar, 1/2 of the mashed garlic, salt, 1/2 cup of chopped cilantro and set it aside for an hour.
Step 2
Place the potato wedges in an oven tray, rub it all together with vinegar, All spice, salt and olive oil & bake for 20 minutes.
Step 3
Mix in a bowl the lemon juice, balance of the garlic and the water.
Step 4
Remove the Tray from oven, Put the chicken pieces and pour the mixture on the chicken and potato and cover, then sprinkle the balance green coriander on top and cover the tray with foil. put in oven and leave it for 45 minutes.
Step 5
Remove the foil from the tray and brush the chicken with the melted butter and return the tray to the oven and broil for an additional 10 minutes.
Step 6
On the serving tray, sprinkle chopped parsley or cilantro on top and Serve hot.
