Tomatoes

1 pintheirloom cherry tomatoes
halved

4garlic cloves
large whole, slightly smashed

1 teaspoonolive oil

¼ teaspoonsalt
Salad

3 cupsbaby arugula
1whole Burrata cheese
small

1 tablespoonbalsamic glaze
I use

¼ cupbasil
torn

2 ouncesrustic loaf
sliced, sliced
Instructions
Step 1
Place tomatoes, garlic, 1 teaspoon extra virgin oil, and 1/4 teaspoon each of the salt and pepper in a bowl and toss, the tomatoes and garlic in the oven at 400 degrees for 20-30 minutes.
Step 2
Place arugula on a platter. Drain burrata and add to the arugula. Top with roasted tomatoes and drizzle any juices that accumulated. Top with balsamic glaze, basil, salt and pepper. Serve with bread.
