Instructions

Step 1
Heat oven to 355 degrees
Step 2
Mix butter and sugar until fluffy.
Step 3
Add, cinnamon, zest and egg and mix.
Step 4
Mix levure chimique (or baking powder), flour and almond flour together and add to egg mixture a third at a time. You can do all this in kitchen aid mixer and when dough starts to come together finish by hand to make a ball of dough. Chill dough for about an hour.
Step 5
I divide dough in about 3 portions to make it easier to roll out. Roll to about 1/8" thickness. Cut with cookie cutters.
Step 6
Place cut out cookies on cookie sheet lined with parchment paper. It is easier to lift off from workspace using a thin spatula. Re-roll scraps for more cookies. Brush cookies with egg yolk into which you have beaten 1 tbsp water.
Step 7
If desired sprinkle some of your cookies with sugar sprinkles. It looks nice to have some plain and some sprinkled mixed together.
Step 8
Cook until tops are browned, 17 to 20 mns.
