Instructions

Step 1
1. Preheat oven to 400F

2. Bake squash and sweet potato at 400 for approx. 35 minutes. THIS WILL NOT COOK THEM THROUGH

3. In a heavy bottom pot, add generous amount of oil.

4. Add prepared celery, carrots, and onion (Mire Poix) until slightly soft.
Step 5
5. Add garlic and seasonings

6. Simmer to combine flavours

7. Add white potatoes

8. Stirr all igredients together.
Step 9
9. Add boiled stock, and remaining water

10. Allow pot to come to a boil, then let simmer.
Step 11
11. When ready, remove squash and sweet potato from oven and cool slightly.
Step 12
12. Peel squash and potatoes, then dice.
Step 13
13. Add squash and potatoes to pot.
Step 14
14. Allow to simmer to combine all flavours.
Step 15
15. When all veggies are soft, blend or mash
Step 16
16. Allow to simmer another 10 minutes to finish combining all ingredients.
Step 17
17. Serve when ready.
