Pumpkin Buns with Cream Cheese Filling

Step 1
To make the pumpkin puree at home start by peeling the pumpkin and cutting into 1-2 inch cubes. Steam the pumpkins over medium flame for 15-20 minutes until they're soft to mash with a fork. Blend the pumpkins and divide the portion for the dough and the filling.

Place the pumpkin puree for the filling in a cheesecloth to drain the excess water.
Step 3
In a large bowl place all the ingredients (except butter ) for the dough and mix well. Knead the dough for 10-15 minutes until it becomes smooth. Add the butter and knead the dough for another 5 minutes until the dough is smooth and not sticky. The dough should be slightly soft and if it's too sticky add 1 tbsp flour at a time.

Place the dough in a lightly oiled bowl and cover it with a damn cloth or a plastic wrapper. Place the bowl in a warmer place in the kitchen and let it rise for 1-2 hours.

Start making the filling by adding the cream cheese, pumpkin puree and butter. Whip everything together until all the ingredients are well combined. Add the powder sugar, and pumpkin spice, and whip it for another 2 minutes until the mixture looks smooth. Refrigerate the filling for at least 30 minutes to harden the cream cheese.

When the dough has risen, put the dough on a clean working surface and divide the dough into 8 portions. Make each dough into a ball then let it cover with a damn towel.

Dust some flour on the rolling pin and roll out the dough ball into a round shape. Place 1 ½ tbsp of the filling in the middle of the flatten dough and close the edges from both sides and pinch to seal the filling inside.

Cut 8 cotton threads by 100cm then place them in water.

Take one thread and pace it (halfway point )under the bun. Pull both strings together to create a cross. Flip the bun over to create a cross on the bottom, and repeat this process until the bun is divided by 8 pieces. Tie a knot at the bottom and cut the excess thread.

Place all the buns on a silicone baking mat then cover it with a plastic wrap and let them rise for 30-40 minutes.

When the buns have risen then beat an egg and brush it on top of the buns. Feel free to sprinkle some cinnamon sugar on top of the buns.

Preheated oven to 350 °F

Place the buns in the oven and bake them for 15-20 minutes until golden brown.

When the buns cool down, using a scissor cut the thread and carefully remove it. Enjoy them fresh.
