If you're a fan of sticky date pudding, you have to try out my chocolate version! Its decadent, soft, chocolatey with the date flavour and the delicious caramel on top takes it to another level!

Ingredients

9 ozDates
washed and de-seeded
1 cupWhole milk
¾ tspbaking soda
½ tspEspresso powder
½ cupButter
6 TbspBrown sugar
2eggs
1 tspvanilla extract
⅓ cupCocoa powder
1 cupAll purpose flour
1 ¼ tspBaking Powder
¾ tspSalt
Chocolate Caramel Sauce
Instructions
Step 1
To make the chocolate caramel sauce, add in the brown sugar, butter, cream, chocolate and salt in a saucepan. Bring it to a simmer over medium high heat and then cook for about 5 minutes, whisking occasionally until it thickens up. It will thicken more as it cools.
Step 2
Preheat the oven to 350F and line your 9x9 square pan with parchment paper. (if the pan is dark colored, reduce the temp to 325F)
Step 3
Chop up your dates and place them in a bowl. Sprinkle it with baking soda, instant coffee and cover with hot milk. Make sure the dates are submerged. Let that sit for about 15 minutes to soften. Now you can blend this in a food processor/blender or use a muddler to mash up the dates well.
Step 4
In another bowl, beat together the brown sugar and butter until light and fluffy. Crack in the eggs and beat until it’s well incorporated. Then add the vanilla and the mushed dates and beat well.
Step 5
Sift in the cocoa powder to ensure there are no lumps and beat it. Then add in the flour,salt and baking powder and gently beat it for a little bit, just until it almost comes together. Then use a spatula to mix it all together until combined.
Step 6
In a lined 9x9 square pan, spread the batter evenly. Bake at 350F for about 40 minutes or until a toothpick inserted comes out clean.
Step 7
Take the cake out and let it cool for about 30 minutes and then poke some holes with a fork. Drizzle over the chocolate caramel sauce. Cut and serve with additional sauce and a scoop of ice cream if you prefer.
