Instructions

Step 1
Spray muffin tin with coconut nonstick spray
Spray muffin tin with coconut nonstick spray

Add 1 3/4 cup oatmeal to blender and process to oat flour

Add remaining dry ingredients and oat flour to large mixing bowl
Step 4
Place chopped apple, carrots and coconut milk in blender and process until smooth
Step 5
If blender can accommodate remaining ingredients- add to blender and process until combined If blender cannot accommodate volume- pour blended ingredients into separate bowl, then blend remaining ingredients
Step 6
Combine wet and dry ingredients
Step 7
Divide between muffin pans and bake at 375 until muffin pulls away from sides of pan
