Step 1
1. Melt 1 Tbsp of the olive oil in a medium saucepan.

2. Scramble and cook the egg in the butter.
Step 3
3. Add the other Tbsp of butter, spinach, and the riced cauliflower.

4. Season with garlic, salt, and pepper and sauté́ until spinach wilts.
Step 5
5. Pour into a bowl. If your macros allow add sour cream to the top.
