Maqloob or Makluba
Maqloob or Makluba is a delicious middle eastern dish, It consists of meat of choice (chicken, lamb, beef) I used Beef today, basmati rice, and fried vegetables. All placed in a pot which is flipped upside down when served, hence the name maqloob, which translates to upside-down.

1 cup was the liquid from the beef and 2 was chicken broth

Instructions
Step 1
1. Boil the Beef— Put a pot on medium to high heat. Add in 2 tablespoons olive oil, then the beef and cook for 5 minutes. Next add in the spices and aromatics (1/2 tsp cumin, 1/2 tsp coriander, 1/2 tsp black pepper, 1/2 tsp turmeric, 1/2 tsp salt, 4 cardamom pods, 2 bay leaves)
Step 2
2. Add in 3 cups water, give it a stir, cover, turn down the heat to medium and boil for about 30 minutes. Once boiled remove the beef from the liquid and set aside. Do not throw away the liquid. It’s going to be used when cooking the maqloob.
Step 3
3. Vegetables— peel wash and cut the eggplant, potatoes, onion and bell pepper into 1/4inch rounds, then fry until golden.

4. Slice the tomatoes for the bottom of the pot

5. Start layering the maqlooba- on the bottom of the pot add the sliced tomatoes, followed by the cooked beef, fried potatoes, eggplants, peppers and onions.
Step 6
6. Rice- wash the rice until the water runs clear (if you have time let it soak in the water for 20 minutes) and strain.
Step 7
7. To the washed rice add 2 tablespoons olive oil, the seasoning and spices ( 1 Tbsp salt, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, 1 tsp turmeric, 1 tsp black pepper, 1/2 tsp chili flakes) and mix well.

8. Layer the rice on top of the vegetables.
Step 9
9. Stock— In another bowl mix together tomato paste and 3 cups of broth (I used one cup reserved liquid from the beef, and 2 cups chicken broth). Pour the stock on top of the rice and vegetables.
Step 10
10. Put the pot on medium to high heat and bring it to a boil it should take about 10 minutes, once it comes to a boil and bubbling, turn down the heat to low and let it cook for another 40 to 50 minutes until all the liquid is absorbed and the rice is cooked.

11. After it’s done turn the heat off and let the maqloob rest for about 10 to 15 minutes before flipping it into a tray garnish with parsley and enjoy!!
