Instructions

Step 1
Pre-heat the oven to 375 degrees and line two cookie sheets with parchment paper.
Step 2
Sift together the flour, baking powder, and salt in a bowl and set aside.
Step 3
In a mixer, cream the butter with the granulated sugar and brown sugar until fluff. Scrap the sides of the bowl once or twice during this process.
Step 4
Add the egg and vanilla, then beat at medium speed until combined. again, scrape the bowl once during this process to ensure it mixes in evenly.
Step 5
Add the dry ingredients and mix on low until just combined - about 30 seconds.

To Shape the Dough

Divide the dough into equal sized pieces based on the number of servings. place about 1/2 cup of sugar into a shallow bowl.
Step 7
Dip your hands in a bowl of cold water and shake off the excess water. Roll each piece of dough into a ball, then roll in the sugar to coat and place on the cookie sheets about two inches apart.
Step 8
Butter the bottom of a drinking glass (you can use the leftover butter wrappers). Then, dip the bottom of the glass in the sugar and use this to press the cookie balls down until they are about 3/4 inches thick. Periodically re-dip the glass in the sugar every 3 cookies to prevent it from sticking to the dough.
Step 9
Bake for 15 - 18 minutes, rotating once in the middle of this time. The cookies are done when the edges are golden brown, and the center has just set and is lightly colored.
Step 10
Cool the cookies for at least 3 minutes on the baking sheets before removing with a spatula to a wire rack for additional cooling.
