Ingredients
4 servings
For the stuffing
1 ½ cupspinach
½ Tbspolive oil
0.5onion
small, diced
4 ozandouille sausage
minced
½ cupcream cheese
¼ cuphalf & half
½ cupparmesan reggiano
shredded
salt
to taste
Pepper
taste
1 tspgarlic powder
1 tspchicken bouillon powder
¼ tspcayenne pepper
¼ tspred pepper flakes

Instructions
For the stuffing and salmon
Step 1
pre heat oven to 365. Start off by Sautéing the sausage and the onion in a large skillet over medium heat.

Step 2
Once brown remove from heat. add the mixture to the spinach except for 2 tbsp or 1/4 cup.
Step 3
add the ingredients listed below to the spinach, mix until well incorporated then set aside.

parmesan reggiano½ cup
half & half¼ cup
salt

garlic powder1 tsp
chicken bouillon powder1 tsp
cayenne pepper¼ tsp
red pepper flakes¼ tsp

using a sharp knife cut a small pocket from the thicker side of the salmon making sure to not cut all the way through from the back or from the side. watch my reel on IG or tiktok recipe video for refference.

stuff the salmon pocket with the filling. don't be stingy but also don't be greedy.
Step 6
season the salmon with your favorite seasonings. sear each on both side carefully. ( work in bacthes) before adding the butter & basting. finish the oven for 5-8 mintues.

After the salmon is done remove from the pan. add the same pan back over medium heat. using the drippings reheat the sausage & onion mixture you set aside.

Add the half & half. allow to simmer for 5-8 minutes or until it begins to thicken. add the cream cheese. season with the listed spices and add the jerk paste

add the parmesan cheese & stir. turf off heat and add the crab meat. stir it through the sauce.

serve the stuffed salmon over rice or mash potatoes. top with the jerk cream sauce. Garnish with fresh chopped parsley & enjoy!
