Step 1
In an instant pot or rice cooker, add the olive oil, garlic, and white onions. Cook for 5 minutes.
Step 2
While the onions are cooking, season the lamb chops with the dry rub and let it sit for 5 minutes
Step 3
Add in the rice into the instant pot with dates, fig jam, and water and cook until the rice is ready
Step 4
While the rice is cooking, you’re going to prepare your lamb on an oiled pan over medium high heat. Cook on the first side for 4-6 minutes, then flip and cook for another 4-6 minutes (or until internal temperature reaches 145°F).
Step 5
Serve immediately!
