Ingredients

or beef, cubed

2onions
finely chopped

4 clovesgarlic
minced

2tomatoes
diced

1 tablespoontomato paste

1 teaspoonground cumin

1 teaspoonground coriander

1 teaspoonpaprika

½ teaspoonground turmeric

½ teaspoonground ginger

¼ teaspoonground cinnamon

¼ teaspooncayenne pepper

2 tablespoonsolive oil

¼ cupfresh cilantro
chopped, or parsley, for garnish

Instructions
Step 1
In a large pot or Dutch oven, heat the olive oil over medium heat.
Step 2
Add the chopped onions and minced garlic to the pot, and sauté until they are soft and translucent.
Step 3
Add the cubed lamb or beef to the pot, and cook until browned on all sides.
Step 4
Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, paprika, ground turmeric, ground ginger, ground cinnamon, and cayenne pepper (if using). Mix well to combine.
Step 5
Pour in enough water to just cover the meat, then season with salt and pepper to taste.
Step 6
Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let it cook gently for about 1.5 to 2 hours, stirring occasionally, or until the meat is tender and the flavors have melded together.
Step 7
Once the meat is tender, taste and adjust the seasoning if necessary.
Step 8
Serve the dobara hot, garnished with chopped fresh cilantro or parsley, and accompanied by lemon wedges for squeezing over the top.
Step 9
Enjoy your authentic Algerian dobara with bread, couscous, or rice, and perhaps a side of salad or cooked vegetables.
