Chocolate-Raspberry Madeleines

So much flavor in these tiny and airy cakes! I love how buttery and delicate madeleines are, and these are made with brown butter to compliment the vanilla flavor. I also half-dipped them in chocolate and topped with raspberries as those flavors go so well together.

Instructions

Step 1
Whip the eggs, sugar, and vanilla until light and fluffy.
Step 2
Sift in the flour and gently fold. Pour the brown butter and gently fold until just combined. Let the batter rest for at least 1 hour.
Step 3
Brush the madeleine pan with butter and scoop 2 tbsp sized ball. Bake at 350f for 8-10min.
Step 4
Dip the top of the madeleine in melted chocolate and top with crushed freeze-dried raspberries. Enjoy!
