Smooth Homemade Queso Dip

This queso dip is so flavorful and is smooth both fresh out the pot and right out of the fridge. Seriously, it's like magic. This is a 10/10, 5 star, highly recommend recipe.

Ingredients
2 servings
125gcheddar cheese
freshly shredded
1 cuppepper jack cheese
freshly shredded
1 Tbspcornstarch
½ tablespoonbutter
2garlic cloves
minced
¼ cupwhite onion
finely chopped
1 x 13 ozevaporated milk
can, not low fat
1tomato
finely diced, I used Roma
¼ teaspoongarlic powder
¼ teaspoononion powder
¼ teaspoonground cumin
4 ozchopped green chilies
fire-roasted
¼ cupcilantro
finely chopped
2 tablespoonsmilk
any kind
8 ozsausage
cooked
salt
to taste
Instructions
Step 1
To a medium bowl, add cheeses and cornstarch. Mix to coat evenly.
Step 2
To a pot or large pan on medium-high heat, add butter, onion, and garlic. Cook until onion is translucent, about 3-4 minutes. Add tomatoes and cook until soft, 2-3 minutes.
Step 3
Pour in evaporated milk and cheeses. Stir to combine.
Step 4
Add in all the spices and green chilies.
Step 5
Stir until the cheese melts and becomes smooth. Add in the cilantro and sausage.
Step 6
Stir in 1 tablespoon of milk at a time until the queso reaches the desired consistency. It will become thicker as it cools.
Step 7
Serve warm with chips! :) Also delicious straight out of the fridge the next day!
