Instructions
Step 1
Season the CHICKEN with 1 tsp. of the KOSHERS SALT, ITALIAN SEASONING, and GARLIC POWDER
Step 2
In a large skillet heat 1 tbsp. of OLIVE OIL over medium high heat.
Step 3
Add the seasoned CHICKEN and cook until golden brown; remove from the pan and set aside.
Step 4
In the same pan, heat the remaining 1 tablespoon OLIVE OIL. Add the ZUCCHINI, BELL PEPPERS, ONIONS, and season with remaining SALT and cook while stirring until tender.
Step 5
Add the GARLIC, and cook until fragrant, about 1 minutes, stirring occasionally.
Step 6
Add the TOMATO PASTE and DICED TOMATOES, stirring until well combined.
Step 7
Add the cooked CHICKEN back to the pan, turn the heat to medium low, and simmer uncovered for 5 minutes, top with CHEESE and cover to melt.
