Instructions
Step 1
Brown sausage in a large skillet.
Step 2
Remove sausage with a slotted spoon and set aside.
Step 3
Cut bacon into small pieces.
Step 4
Add bacon to same skillet and cook until crispy.
Step 5
Stir in chopped onion. Cook for 5 to 6 minutes or until onion is translucent.
Step 6
Stir in minced garlic and cook for 1 minute, stirring frequently.
Step 7
Add chicken broth and water to a large pot. Add crushed red pepper flakes, salt, and pepper if desired.
Step 8
Add cubed potatoes and the cooked sausage/bacon/onion/garlic to the pot and bring to a simmer over medium heat.
Step 9
Continue cooking until potatoes are tender, about 10 minutes.
Step 10
Add the kale to the soup, and simmer for an additional 5 to 10 minutes, stirring occasionally.
Step 11
Stir in the heavy cream and let heat through.
Step 12
Ladle soup into bowls and serve with Parmesan cheese
