Chunky bean, tomato and kale hearty soup

A hearty stew-style soup with cannellini beans - chilli flakes are optional if you'd prefer a spicy version.

Ingredients
2 servings
1 tablespoonvegetable oil
1onion
peeled and diced
1clove garlic
minced
1stick celery
diced
1 tspchilli flakes
1 x 400gcannelini beans
drained
1 x 400gcan chopped tomatoes
1 tablespoontomato puree
1low salt vegetable stock cube
50gkale
finely chopped
Instructions
Step 1
Place the vegetable oil into a large pan and heat. Add the onions, celery and garlic and fry gently for 3 minutes, then add the chilli flakes and fry for a further minute.
Step 2
Add the chopped tomatoes, cannellini beans, tomato puree and stir together.
Step 3
Make up the stock in a jug using the stock cube with 250ml boiling water.
Step 4
Add the stock into the pan with the other ingredients then stir in the chopped kale.
Step 5
Put the lid on the pan and leave to simmer on a low heat for 20 minutes.
Step 6
Serve and garnish with slivers of chilli if liked.
