Instructions

Step 1
• Preheat the oven to 350 F and line pans with parchment paper. (I used 1 8in circular cake pan)
Step 2
•Pour fresh lemon juice over chopped strawberries, drain them after a few minutes.
Step 3
• Whisk together 1 1/4 cup all -purpose flour, salt and baking powder and set aside.
Step 4
•Beat butter with sugar and cream cheese until it's light and fluffy.
Step 5
•Add egg and vanilla and mix well.
Step 6
•Gradually add flour mixture and mix until it's well combined
Step 7
•Sprinkle strawberries with 1-2 tablespoon flour, toss them until all strawberries are coated with thin layer of flour and then stir them really gently in the batter.
Step 8
•Refrigerate dough for at least 3 hours ( I let mine sit for almost 1 day)
Step 9
•Drop batter onto pan lined with parchment paper (leaving at least 2-3inch of free space on top)
Step 10
•Place in oven for 30min or until lightly golden brown on top and edges
Step 11
•Set on wire rack to cool completely before adding vanilla icing

For the vanilla icing

Step 12
•Add powdered sugar, milk, vanilla extract, and softened butter into a bowl and mix to preferred consistency
