Instructions
Step 1
In med. saucepan, melt butter & chopped chocolate, stirring frequently, over med. heat. Cool (15 min.)
Step 2
In med. bowl, whisk together flour, cocoa powder, baking powder, & salt.
Step 3
Using electric mixer, beat sugar, eggs, & vanilla on low until smooth (2 min.) Mix in cooled chocolate mixture just until blended. Add flour mixture in 2 batches, mixing on low until just combined. Refrigerate dough (at least 1 hr.)
Step 4
Preheat oven to 325°F Line 2 large baking sheets with parchment. ,Using a tablespoon, scoop dough; roll between your palms to form 1” balls. Arrange about 16 balls 2” apart on each cookie sheet, flattening slightly.
Step 5
Bake (12 min.) until tops of cookies crack.
Meanwhile, snip 8 marshmallows in half crosswise; stick 1 square of chocolate onto cut sides.
Step 6
Remove cookies from oven; gently press a marshmallow half, chocolate side down, into each cookie. Return to oven (4 min.)to bake until the marshmallows are just softened
Step 7
Cool cookies (5 min.) on pans; grate remaining chocolate over hot cookies. Using spatula, transfer cookies to cooling racks.
Step 8
Repeat with new batch. (Bake each batch on a new sheet of parchment.)
