Ingredients

2 ½ cupsZucchini
Finely Grated

¼ cupdill
finely chopped

¼ cupcoriander
finely chopped

½ cupMung Beans
Sprouted

⅓ cupspring onions
chopped

1 ½ cupschickpea flour

2 TbspChia Seeds
Soaked in 4 Tbsp Water

2 tspGluten Free Baking Powder

½ cupwater
filtered

2 Tbspcoconut oil

1Zest Lime

1 pinchSalt
more to taste as needed

Instructions
Step 1
Finely grate zucchini in food processor then squeeze out excess liquid.

Step 2
Add all ingredients, mix well then let sit in fridge for min 1hr to let batter fluff.
Step 3
Can leave overnight to improve fritter texture upon pan frying the next day.
