Instructions

Step 1
Wisk together 8 eggs, 1/4 cup milk and 1/4 teaspoon salt (set aside), in cast iron skillet saute 1 tablespoon olive oil, 2 minced garlic cloves, 1/2 sweet onion, 1/4 red bell pepper, 1/4 orange bell pepper, 2 cups chopped spinach, 1/8 teaspoon smoked paprika (add smoked paprika after veggies are cooked) Once veggies are cooked add the egg mixture to pan - sprinkle w/1/4 cup feta then bake in 400 degree oven for 20 minutes.
