Ingredients

2 tablespoonsvegetable oil
12 ounceshot italian sausage
or sweet
1onion
chopped fine
1carrot
peeled and shopped fine
4garlic cloves
minced
1 teaspoonfresh thyme
minced, 1/4 teaspoon dried
4 cupslow sodium chicken broth
2bay leaves
10 oz15 bean soup mix
salt-soaked
8 ouncesswiss chard
stemmed and chopped
1tomato
large, cored and chopped
salt

Instructions
Step 1
Heat 1 tablespoon oil over medium-high heat, brown sausages, transfer to plate
Step 2
Heat remaining oil over medium heat. Add onion and carrot, cook until softened. Stir in garlic and thyme and cook until fragrant, about 30 seconds. Stir in broth, soaked beans, bay leaves, scraping up andy brown bits. Add sausage to the pot with any drippings.
Step 3
High pressure for 25 minutes. Quick release when done, do not let go to warm.
Step 4
Remove bay leaves, transfer sausage to cutting board and slice 1/2 inch thick rings. Turn on sautee mode and bring to simmer, stir in chard and tomato, and cook until chard is tender, about 5 minutes. Stir in sliced sausage, season to taste, serve.
