Instructions
with cast iron skillet in middle rack.
Step 1
Remove from oven & add olive oil to skillet; swirl pan to coat entire bottom.
Step 2
In sm. bowl, mix together Italian seasoning, salt, pepper, & garlic powder.; sprinkle over pork, rubbing spices in with your fingers. Place pork in skillet. Using oven mitts, return skillet to oven & bake (10 min.)
Step 3
After 10 min., remove theskillet from the oven and using tongs, flip the pork over. Reduce the oven temperature to 400F and continue roasting another (15 min. longer.)
Step 4
Remove skillet from oven; add butter & cover. Rest pork (15 min.) before serving. [Pork is done when internal temperature registers 145F.]
Step 5
Remove foil, spoon butter sauce over pork & slice. Transfer pork to plate & pour more amazing sauce over top.
Step 6
Serve with rice pilaf or sweet potato & a green veggie.
EXPERT TIPS
Step 7
Season pork on all sides: Make sure the it is completely coated with spices. (Experiment with your favorite spices & spice blends or simply use salt & pepper.)

Trim fat with sharp knife, if necessary.
Step 9
Don't forget the butter: The heat from the pan will melt the butter which will mix with pork’s juices, making a wonderful sauce to cover pork.
Step 10
Be sure to cover pork before slicing: Letting the pork "rest" for about 15 min. after cooking is important. It allows the juices to reabsorb back into meat so you are sure to have the juiciest pork possible.
