Grilled Shrimp Caesar Salad

A delicious grilled take on a classic. Grilled romaine hearts and shrimp are dressed with a creamy caesar dressing, juice from grilled lemon, and topped with toasty herby croutons and grated parmesan cheese. Perfect for the summer!

For the Caesar Dressing
⅓ cmayo
½ tspdijon mustard
1garlic clove
minced
1 dashesworcestershire sauce
⅓ cparmesan cheese
grated
½ tspcracked black pepper
salt
1 TSPfresh lemon juice
For the Grilled Shrimp Caesar Salad
Instructions
For the Caesar Dressing
Step 1
In a small bowl, add ingredients and whisk until smooth.
For the Grilled Shrimp Caesar Salad
Step 2
Keeping the romaine lettuce whole, gently rinse the lettuce. Gently pat the lettuce dry with paper towels.
Step 3
On a cutting board, gently remove any loose outer leaves from the head of the lettuce and set aside for another use. Using your knife, shave off the browned part of the root end, leaving the root end intact so that the lettuce head stays together.
Step 4
Lay the lettuce on the cutting board and slice in half vertically. Blot any leftover water off from the washing process.
Step 5
Drizzle 1TBS of olive oil over the sliced sides of the lettuce. Season with salt and pepper.
Step 6
Prepare the croutons. In a small bowl combine bread cubes, dried italian seasonings, garlic clove, salt, pepper, red pepper flakes, and 1 TBS of olive oil. Toss to coat. Set aside.
Step 7
Season the shrimp. In a small bowl combine the shrimp with ½ tsp olive oil, salt and pepper. Set aside.
Step 8
Add a small cast iron skillet onto the grill grates. Pre-heat the grill over medium-high heat. This will allow the cast iron pan to preheat as the grill pre-heats.
Step 9
When the grill comes up to temperature, add the croutons to the cast iron skillet and toss every few minutes until golden brown and toasty (about 8-10 minutes). Using oven mits, remove from heat and set aside.
Step 10
Lightly oil grill grates with vegetable oil or grill safe non-stick spray. Place the lettuce cut side down on direct heat. Add shrimp to direct heat on the grill. Place lemon cut side down on the grill.
Step 11
Grill shrimp for 2 minutes then flip and finish cooking for another 2 minutes. Grill lettuce 3-4 minutes until slightly charred.
Step 12
Grill lemon until slightly charred. About 4 minutes.
Step 13
Remove lettuce, shrimp, and lemon from the grill.
Step 14
Assemble the salad by placing the lettuce leaves cut side up on a large plate, place grilled shrimp on top. Squeeze grilled lemon over the lettuce leaves and shrimp. Add desired amount of croutons. Drizzle caesar salad dressing on top of the salad, and grate parmesan cheese over the top. Serve and enjoy with a knife and fork!
