Instructions

Step 1
Preheat over to 350° and lightly oil and 9 x 9 inch square baking dish.
Step 2
For the base: In a medium mixing bowl, stir together the flour, sugar, and salt. Add the coconut oil and cut it in using a pastry cutter or fork until the mixture resembles fine crumbs. Stir in the milk until the dough is uniform. The dough will be slightly moist. Press the dough evenly into the bottom of the prepared baking dish, and bake for about 20 minutes, or until the edges begin to brown.
Step 3
While the base bakes make the curd. In a small saucepan, combine the lemon juice, sugar, cornstarch, lemon zest, salt, and turmeric (if using). Whisk until uniformly combined. Place the saucepan over medium heat and whisk in the coconut cream. Continue to whisk as the mixture heats up. Once the mixture reaches a simmer it will thicken up quickly, and cook about one minute more, whisking vigorously, then remove from the heat.
Step 4
Once the base comes out of the oven, pour the lemon mixture over it and smooth into an even layer. Return the pan to the oven and bake 15 minutes. You should see bubbles forming in the curd.
Step 5
Remove from the oven and transfer to a cooling rack. The curd will continue to set as it cools. Once cooled completely, slice into bars and sprinkle with powdered sugar. Enjoy!
