This recipe was for making waffles but didn't have a waffle maker so I made pancakes.

Ingredients

2 ¼ cupsall-purpose flour
1 Tbspbaking powder
3 Tbspsugar
brown
½ tspsalt
1 tspcinnamon
2eggs
large, separated
½ cupolive oil
2 cupsmilk
1 tspvanilla extract
1 cupchocolate chips

Instructions
Step 1
Preheat on medium low the pancake pan or waffle iron, and spray with non-stick cooking spray.
Step 2
In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
Step 3
In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
Step 4
In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla extract.
Step 5
Add the egg yolk mixture to the dry ingredients and mix well.
Step 6
Fold in the egg whites.
Step 7
Pour the batter onto your hot pan using 1/4 cup. After 1 minute flip for the other side.
Step 8
Repeat with the remaining batter.
Step 9
Serve immediately with your favorite toppings and sides. Enjoy!
