Instructions

Step 1
In a large pot, add oil to medium heat and let it get hot.
Step 2
Add the crushed garlic and chicken breasts to the bottom. Add all the spices to the chicken and flip the chicken over to sear both sides with the garlic and spices.

Add 6 cups of chicken stock and the tomato and bring to a boil. Simmer the chicken for 20-40 minutes until the chicken is fully cooked and can be shredded.
Step 4
Shred the chicken gently (depending on how large the pieces of chicken you prefer in the stew) and then add in the molokhia leaves.
Step 5
Bring the molokhia to a boil and then simmer for an additional 20 minutes until it darkens in color. If you like it more runny, add more stock. Adjust to the thickness of your liking.

While the molokhia is boiling prepare the rice.
Step 7
Add oil to a pot on medium heat.

Add the rinsed rice to the pot and salt and mix it with the oil.

Add 8 cups of water and bring it to a boil.
Step 10
Cover the rice and lower the heat to medium/low for about 10-15 minutes until all the liquid has been absorbed by the rice and it is nice and fluffy.
Step 11
Plate your rice topped with the molokhia stew and garnish with fresh squeezed lemon juice.
