Step 1
1. Put the dried chillies , mace and peppercorns in a small frying pan and toast for 1 minute over a medium low heat , Cool then transfer to a pestle and mortar or a spice grinder until very fine. Tip into a large bowl ,stir in the remaining ingredients (except the lamb )to make a smooth marinade . Add the chops and massage in the marinade . Cover and chill for atleast 3 hours, ideally overnight 2. Preheat the oven to 190 degree C , gas mark 5.Put the lamb chops on a foil-lined tray .Transfer the excess marinade to a pan , put over a low heat and add a little extra ghee and 1 tbsp water.Roast the chops for 22-25 minutes. turning a couple of times and basting with the marinade mixture. Preheat the grill to high, then cook the chops for a final 2 minutes on each side to crisp up set aside to rest while you make the chutney.

3. Put the coriander, mint, chillies , lemon juice and 4 tbsp water in a small blender . Whizz until smooth and runny . pour in to a bowl then stir the yogurt and season with salt . Scatter over a few shredded mint leaves .serve the chops with chutney. Extra coriander leaves and lemon wedges.
