Instructions
Step 1
Pound the chicken breast flat. Marinade the chicken and set aside for at least an hour
Step 2
Then to make gunpowder mix, toast coriander seeds and cumin seeds on low heat for about 2 mins
Step 3
Add that to a bowl along with spring onions, mint leaves, coriander leaves, Chaat masala, lime juice, salt and green chilli finely chopped
Step 4
Next heat your griddle pan and get oil hot. Cook the chicken 4 and a half mins on each side. Don't touch while it's cooking. Get internal temp to 165f.
Step 5
Slice and toast your baguette
Step 6
Let chicken rest for 5 mins then cut in pieces
Step 7
Add melted and oil to the bowl with gunpowder mix and mix
Step 8
Add chicken to bowl and mix and toss
Step 9
Assemble your sandwich, mayonnaise, salad, chicken, grated paneer (can broil to melt paneer or blow torch it, optional), onions, tomato, some of the gunpowder butter
Step 10
And enjoy!
