One Skillet Sweet Potato Burrito Bowls

Ingredients
4 servings
1 lbsweet potatos
cut in 1/2 inch cubes
3 Tbspolive oil
seperated
1 cupwhite rice
½ tspminced garlic
½ tspchili powder
1 tspcumin
salt
to taste
pepper
to taste
1 canfire-roasted tomatos
diced
1can black beans
1 cupfrozen corn
2 cupsvegetable broth
1 cupsweet bell peppers
thinly sliced
2 Tbsplime juice
optional
1 ½ cupssharp cheddar cheese
grated
¼ cupcilantro
chopped, optional
Instructions
Sweet potatos
Step 1
Peel the sweet potatoes and cut into 1/2 inch cubes.
Step 2
In large skillet heat 2 tbsp oil over med heat. Once oil is simmering, add sweet potatos.
Step 3
Saute 7-10 minutes, until mostly tender and slightly browned.
Step 4
Add remaining oil and 1 cup white rice to pan.
Rice
Step 5
Continue to cook, stirring constantly for 2-3 minutes on medium heat. Add garlic, chili powder, cumin, salt and pepper. Stir 30 seconds, till fragrant.
Other Ingredients
Step 6
Add the can of undrained tomatoes, the can of drained and rinsed beans, the corn, vegetable broth, and bell peppers.
Step 7
Stir, bring to boil, then reduce heat to low simmer.
Step 8
Simmer covered fot 10-15 minutes until liquid is absorbed and rice is cooked. Stir to prevent rice burning.
Finishing
Step 9
Remove lid, stir in lime juice and cilantro. Top with cheese.
Step 10
Recover, cook 1-2 minutes to melt cheese.
Step 11
Serve in bowls, or in burritos.
