Instructions

Step 1
1. Use a vegetable peeler to expose strips of flesh on the aubergine, rub salt on the exposed fleshy bits and roast in preheated oven at 180 for 30-40 mins.
Step 2
2. Blend all other ingredients together to make mojo Verde marinade.
Step 3
3. When aubs done marinade in mojo Verde for half an hour - rub that goodness all over the aubs and make sure to slice the fleshed bits open to get lots of marinade right up in em.
Step 4
4. Pop back in oven at 180-200 degrees for another 20 or so.
