Instructions
Step 1
Heat a medium size frying pan with a little olive oil in in. Slice fresh tomato into thickesh slices 1/4 inch or so. Sprinkle with a little salt and pepper on both sides. Place on one side of the pan to stew.
Step 2
Add shredded chicken to the other half of the pan.
Step 3
Flip the tomatoes to stew the other side once they've started to soften. Add a little balsamic vinegar to the tomatoes. Stir the chicken on its side of the pan to heat evenly. Add thin slices of cheese on top of the chicken to melt.
Step 4
Toast the bread and place on a plate. Add mayo if you like. Then add the heated chicken, then the stewed tomato.
Step 5
Add a little butter or olive oil to the same pan and dump in a couple cups of spinach. Stir well. Add a tablespoon of water and cover. Cook the spinach for 2 minutes or so, until wilted and soft. Add on top of the chicken and tomatoes and enjoy!
