Instructions

Step 1
Add the shallots to a medium skillet or saucepan. Add enough oil to cover the shallots. Gently cook the onions in oil for about 15 minutes, over medium-low heat, occasionally stirring, until the shallots soften and just start to brown.
Step 2
Carefully pour everything through a sieve in a bowl. Save the shallot oil for reuse if desired (be sure to keep refrigerated and dispose of any unused portion after 14 days). Place the shallots and garlic on a cutting board. Finely chop the mixture. Add chives and parsley if desired and fully incorporate.
Step 3
Heat oven to 400°F
Step 4
Cut the bread and evenly spread the shallot mixture on the cut sides.
Step 5
Place the bread on a baking sheet or rack and bake for 5–8 minutes. The bread should look golden brown on top with caramelized edges.
Step 6
Top with cheese if desired, slice and serve!
