Step 1
Slice the halloumi into thick slices. Add halloumi to a wide plate and drizzle on honey, oil, lemon juice, chilli flakes and mint. Mix it around so all the halloumi is coated and let it sit in there for 30 minutes.
Step 2
Heat a dry frying pan over a medium heat, then add the sliced halloumi. Give it 1-2 minutes per side, or until the halloumi is golden-brown.
Step 3
Once it's browned, add the leftover lemon-honey mixture to the pan and let it bubble together for 2-3 minutes.
Step 4
Serve with fresh coriander and red chillies.
