Instructions
Step 1
Combine the crabmeat, onion, eggs and breadcrumbs in a large bowl. Divide the mixture into 8 equal portions. Shape each portion into a 6cm diameter patty. Set aside in the fridge for 5 minutes to set.






Step 2
Heat the oil in a large non-stick frying pan over high heat. Add the patties and cook for 2-3 minutes each side or until golden.


Step 3
Combine the mayonnaise and lemon juice in a small bowl. Place the rocket on serving plates and sprinkle with the olives. Place 2 rissoles on each plate and serve with the lemon mayonnaise.
