Step 1
1. Peel and thinly slice potato in rounds, thinly slice onion.
Step 2
2. Heat olive oil in large skillet over medium heat. Add potato and onion to cook for 15 mins until potato is nearly soft, stirring often.
Step 3
3. In a small bowl, combine eggs and salt. Stir to combine. Pour the eggs in the pan and cook undisturbed for 8 mins, until top is set.
Step 4
4. Slice into wedges and serve
