Fresh Pasta, whole egg and zero waste

Here’s a fresh, homemade & zero waste pasta recipe, great fun to make with the kids and very rewarding too. Multiply the recipe to suite your needs, I normally work on 1 egg per person.
I often see recipes on here for fresh pasta using just egg yolks, it strikes me as wasteful, I mean what do they do with all the egg whites?! Here’s the zero waste recipe I use

Instructions
Step 1
Place the flour on a clean table, I use an egg to make well in the centre
Step 2
Crack in the whole eggs.
Step 3
Add a pinch of salt
Step 4
Using a fork gradually mix the eggs, bringing in the the flour slowly, continue until it’s comes together.
Step 5
Use a cutter or spatula to form a breadcrumb texture.
Step 6
Kneed together with your hands, if it starts to stick keep on until it comes together
Step 7
Knees until smooth, then rest for 20 minutes before using
