Step 1
Put the pasta, tomatoes, basil, garlic-infused oil, avocado oil, red peppers and water in a deep large sauce pan. Bring to a boil over high heat. Decrease the heat to medium- high and cook, stirring ans turning the pasta frequently with a wooden spoon or tongs, until noodles are tender and the water has nearly evaporated (approx 10 minutes). If the pasta is very thick add more water (up to an additional 1/2 cup). Season to taste with salt and pepper. Garnish with pines nuts or vegan parmesan.
