Instructions
Step 1
In a small mixing bowl, whisk together the almond flour, tapioca, and salt.
Step 2
Add the boiling water and quickly mix with a fork.
Step 3
Knead the dough a few times to form a ball.
Step 4
Heat a 10-inch cast-iron skillet over medium heat.
Step 5
Divide the dough into four to five equal-size balls.
Step 6
Place a piece of parchment paper on the bottom of a tortilla press, then place one of the balls in the center and cover with a second sheet of parchment.
Step 7
Press to form a thin, round tortilla.
Step 8
Add about 1 teaspoon coconut oil to the hot skillet.
Step 9
Gently remove the parchment paper and place the tortilla in the hot skillet.
Step 10
Cook for 2 minutes on each side.
Step 11
Repeat with the remaining dough.
Step 12
Place the cooked tortillas on a plate with another plate flipped over on top of it to keep them warm and soft.
Step 13
Let them sit for about 10 minutes inside the plates; this way, they will be nice and pliable for serving.
