Instructions

Step 1
Depending on your pasta of choice. Check description for the fresh pasta recipe. Dried pasta bring a pot to a boil and add your pasta once boiling.
Step 2
Cut your pancetta into 1cm chunks in to a large pan with a light bit of olive oil cook the pancetta to the conisitency of bacon (note you can substitute pancetta with bacon). Once on into a small bowl beat 1 egg per person (you can add 1 more egg yolk to have a creamy carbonara) and add a handful of parmasan cheese and combine.
Step 3
Once the pancetta is cooked turn the heat off (hopefully you timed the pasta being cooked for this step) drain the excess water but add it to the pan right away. Pour over your egg mixture and mix it around until thoroughly combined. remove from pan and add a topping of parmasan and pepper.
