Instructions
Step 1
Using a cast iron skillet, melt 2 tbsp of butter


Step 2
Using enough cheese to cover the bread, sprinkle the cheese onto both pieces. (If you use your fingers to compress the cheese slightly flipping the sandwich will be much easier)


Step 3
Thinly slice jalapeño and layer on each piece of bread

Step 4
Carefully flip one slice of bread over to make it a sandwich
Step 5
Place sandwich in cast iron and allow the butter to soak into the bread. Once it is slightly toasted, flip the sandwich.
Step 6
Season to taste with old bay and garlic salt and flip the sandwich. Repeat on other side.
Step 7
Once sandwich is grilled to your preference cut diagonally and serve with a dill pickle
