Instructions
Step 1
In a small bowl, combine beef, salt, pepper, and egg white.

Mix in cornstarch.

Marinate overnight (see note on facing page).

Heat wok over high heat.

When pan is hot, add oil for deep-frying.

Add beef and deep-fry until cooked, 3-4 minutes.

Set aside.

Pour oil from pan, leaving just 1-2 tablespoons.

Add onion and pepper to wok.

Stir-fry for 1-2 minutes.

Add scallions and beef.

Add in sugar, hoisin sauce, soy sauce, and sesame oil; cook briefly while stirring until meat and vegetables are coated.
